      A fridge basically cools things by circulation of the air within the chambers (convection) rather than by contact; hence if the shelves are made of places, air circulation is not uniform and some chambers would freeze before others have started cooling; however with a gauze structure, the air-cooling gets more uniform within the fridge and freezer compartment

      metal conducts heat easily. The metal skin (gauze) on the outside of the door is only a protective skin.
